I use PayPal a lot, but I just feel uneasy when using it, because there is always a chance as soon as you ship the person the item they can just file a dispute, get their money back, and then there's nothing you can do, the item is already theres!

I hear you. I was afraid of that as well when I sold on ebay. Anybody can pretend they haven't received the item and get a refund or another batch sent. Once, as a buyer I never received an item, the seller was nice enough to send another one.
While selling, I really never had a problem, everybody got their items and there was never a complaint. But it could happen, fortunately, it seems like there are more honest people than dishonest. I also would recommend insurance on all shippings.

I sell on ebay and only accept Paypal. This is just the nature of the beast. I just chalk it up as a cost of doing business. I don't like it, but it is a very secure way of payment.

That is the common problem there. Some people just do that for the sake of not being able to pay for the item.
So if you sell items online make sure that you are in good terms with the buyer.

Most people are honest and don't pull scams like that. Plus, you can always file a counterargument with Paypal disputes as well.

Well firstly if you use reputed buy&sell websites like Ebay or Amazon, this problem doesn't happen much, since it has its own policies which save sellers from this problem.
What you can do is, you can save a copy of the couriers receipt, which will be provided to you by the courier service.
This is enough proof that you have sent the item.
Also mention in your terms and conditions, that you would not be considered liable in case any losses occur due to the Courier Service Agency.
If the buyer purchases things from you, it will also mean, agrees to the terms and conditions, and then there will be no problem.
Best of Luck.

I love PayPal too, I wish I was the one who came up with the idea. I just received my PayPal visa depit card, and I don't have to worry about a monthly fee like the other prepaid credit cards.

You need not worry as long as the product is genuine. No body would file a dispute unnecessarily for that matter.
